Shrove Tuesday Pancakes
Forget regular pancakes. If you’re in Madeira for Carnival, it’s all about the Malasadas!
These aren’t your average donuts. We make them with flour, eggs, and sometimes a hint of lemon or pumpkin, but the real secret is that they are deep-fried until golden and then absolutely drenched in Mel de Cana – thick, dark Madeira sugar cane honey.
In Madeira, Shrove Tuesday is basically ‘Fat Tuesday’ for a reason. These treats are crispy on the outside, light as air on the inside and 100% addictive.
